Eric C. Rath

Eric C. Rath is a professor of history at the University of Kansas where he teaches courses on premodern Japan and food studies including the history of sushi, Japanese beverages, and the samurai. Living on a farm with five cats in rural Kansas, Eric and his wife grow rice, make their own sushi from local ingredients, and brew sake from rice and other grains. He is a member of the editorial collective of Gastronomica: The Journal for Food Studies, and he is currently researching the history of koji mold and sake.
