After living with a congenital heart defect for nearly 30 years, I was diagnosed with congestive heart failure by my doctors in 2006. The ultimate solution to my problem proved to be a heart transplant, but in the meantime, I needed to make significant lifestyle changes. The most important of these was to begin following a low-sodium diet, which I soon realized was a significant challenge. Early on, all of the reduced-salt recipes I found were difficult to make, contained hard-to- find ingredients, or simply did not taste good. This prompted me to develop my own approach to Breaking the Salt Habit. I succeeded and was able to manage my health effectively and control how I felt each day. In May 2010, I was blessed to receive a new heart and a new start in life. Today, I continue to manage my salt consumption and take excellent care of the heart that was donated to me. I created this book to help the average American eat more healthy with easy-to-follow, low-sodium recipes. I have taken common recipes and made them more sodium friendly, using ingredients that are readily available. Today it is very difficult to find food with low salt content, and in fact, it can be extremely frustrating at times. I have experimented with many recipes, and after much trial and error, I believe I have created some of the best-tasting, low sodium options you can find.
