Mimi Council is the founder of the first organic bake shop. Mimi has made a name for herself by providing all of her recipes with one quick switch to bake them either at sea level or at high altitude, so her recipes can be made no matter where you live! Her blog, Mimi's Organic Eats, shares recipes and lifestyle focused on clean organic living. Mimi is also is a regular contributor to Organic Valley, as well as a freelance recipe developer, photographer, and writer. Mimi is the author of the books Cookies for Everyone, The Mountain Baker, and Effortless Eggless Baking.
