
Paulette Licitra is a New York native, and now a Nashville transplant. She's been teaching Italian cooking in Nashville, Tennessee since 2009. She leads small groups to Italy every year to cook and explore regional cuisines. Paulette completed her professional culinary studies at the Institute of Culinary Education (ICE) in New York City, and worked at Mario Batali’s Lupa restaurant. She’s studied with home cooks and chefs all over Italy, including the regions of Lazio, Campania, Sicily, Tuscany, Puglia, Liguria, Emilia-Romagna, and the Veneto, and lived in Rome during her undergrad studies. Paulette is also known as Chef Paulette and appears frequently on the Nashville NBC affiliate WSMV-TV. Her writing has appeared in the New York Times, Chicago Tribune, and other publications. Paulette was founder and publisher of the literary journal, Alimentum-The Literature of Food. Her first cookbook, Italian Cooking Party, inspired cooks to host their own Italian cooking parties. She is a charter member of the Nashville chapter of Les Dames d’Escoffier. Paulette is Chef Ambassador for the Beko brand of kitchen appliances.
