A fun-loving, gator-riding, pet-lover & bread baker all rolled into one. Retired from banking, computer programming, real estate development & construction now residing in Kansas City where he supports his wife, Beth, in her volunteer efforts with “Friends of Parkville Animal Shelter”. The key to Steve’s success is his YouTube channel “ArtisanBreadWithSteve” where his recipes, methods and techniques are tested on a daily basis. His contributions to the “world of no-knead bread making” is significant (see “List of Contributions” below). His recipes, methods, & techniques are unique and ideally suited for those who want high quality, great tasting, fresh from the oven bread that is fast, convenient, hassle-free, and reliable without special equipment or expensive bakeware. Ideal for the “newbie”, those with busy schedules, and those who are tired of kneading or grown older and find it difficult to knead bread. As a result, his YouTube channel has become one of the leading sources for free no-knead bread videos. And, Steve added a website “nokneadbreadcentral.com” which provides quick and easy access to his videos and cookbooks. His new technique is truly a revolutionary approach to bread making. Friends of Steve List of Contributions to the “World of No-Knead Bread Baking” Steve’s Author Bio would not be complete without listing the innovative methods, techniques & recipes he introduced to the “world on no-knead bread baking” over the past several years. Proofing Skillet (safety first): Transferring dough from a proofing basket to a preheated Dutch oven is awkward, so Steve developed a technique for using an 8” skillet as a “proofing skillet”. The proofing skillet shapes the dough just like a proofing basket, but the handle make it easier to “plop” the dough in a preheated Dutch oven. The proofing skillet was introduced in his first video, “Introduction to No-Knead Bread (4 Ingredients... No Mixer... No Yeast Proofing)” (Feb 27, 2012 – 14:50 min). Skillet Bread (no Dutch oven… no problem): Not everyone wants to bake no-knead bread in a Dutch oven, so Steve developed a recipe and technique for baking it in a skillet which first appeared in “Easy No-Knead Bread Baked in a Skillet (No Dutch Oven... No Problem)” (Feb 24, 2013 – 8:10 min). Shaping Rolls: Have trouble shaping your rolls? No problem... Steve developed a new technique which reduces the handling of dough and uses the bakeware to shape your rolls for you. This is demonstrated in “How to Use Bakeware to Shape & Bake No-Knead Sandwich Rolls” (June 19, 2014 – 7:19 min). Bread Pan: The #1 baking vessel for no-knead bread is… the Dutch oven. The #1 baking vessel for bread is… the bread pan, so Steve developed baking times & temperatures for baking no-knead bread in a bread pan which was first demonstrated in “Introduction to Baking No-Knead Bread in Bread Pans” (July 19, 2014 – 6:36 min). Note: Steve is very through, behind the scenes he was baking 5 loaves a day testing recipes, bakeware, and baking time & temperature. He wanted his recipes to be successful in a wide variety of bread pans. The results of his testing are in his cookbook, “Introduction to Baking No-Knead Bread in Bread Pans (Plus... Guide to Bread Pans)”. Batches (no expensive equipment… no problem): Steve developed recipes and technique for making a batch of artisan quality no-knead bread with a spatula and a bucket. To make it even easier… he designed the recipe around a 5 lb bag of flour so that he wouldn’t have to do a lot of measuring… then he took a large pitcher and marked 60 oz on the side which makes measuring water fast and convenient. It couldn’t be any easier than this. Steve demonstrates the technique in “Introduction to Making No-Knead Bread in Batches (For Restaurants, Bake Sales, Family Reunions...)” (Aug 28, 2014 – 7:25 min). Turbo Bread (ready to bake in 2-1/2 hours): In response to his subscribers and readers… Steve designed no-knead “Turbo” bread for those who don’t want to wait 8 to 24 hours. Those who want bread machine bread, but… don’t want to buy and store a bread machine. It’s for those of you who want a fast reliable way to make fresh from the oven bread without the hustle of expensive machines, Dutch ovens, or kneading. Turbo bread is a fresh approach to making no-knead bread… that provides you with an option. You’ll love it. So throw away your bread machine because you can make bread with a glass bowl and a spoon. “Turbo” bread was first demonstrated in “Introduction to No-Knead Turbo Bread (Ready to Bake in 2-1/2 Hours with Just a Spoon and a Bowl)” (Sept 12, 2014 – 6:01 min). Hands-Free Technique (that’s right… you won’t even touch the dough): The reason many of us are attracted to no-knead bread is because it’s easy, so Steve developed a technique to make it even easier. “Hands-free” technique uses the handle end of a plastic spoon to manipulate the dough (like a dough hook) which allows the dough to go straight from the mixing bowl to the baking vessel (bread pan, etc.) without dusting the work surface with flour or touching the dough. Hands-free technique was introduced with no-knead “Turbo” bread and first demonstrated in “Introduction to No-Knead Turbo Bread (Ready to Bake in 2-1/2 Hours with Just a Spoon and a Bowl)” (Sept 12, 2014 – 6:01 min). Roll to Coat (no more sticky dough): The most common complaint with no-knead bread is sticky dough, so Steve developed an innovative process that coats the dough ball with flour… in the mixing bowl… no more sticky dough. When the dough comes out of the bowl it is easy to handle, especially if you wish to divide the dough into portion to make baguettes, rolls, etc. which is demonstrated in “Introduction to No-Knead Turbo Rolls (World’s Easiest Dinner Rolls… Ready to Bake in 2-1/2 Hours)” (Oct 9, 2014 – 7:04 min). Bread Machine Bread without the Bread Machine: After listening to his readers and subscriber it was apparent to Steve that many of them didn’t want to wait 8 to 24 hours to make bread… so he looked for options. The one that stood out was the bread machine. It’s silly to think a little paddle on the bottom of the bread machine kneads dough. He studied the process and emulated it with a glass bowl and a spoon. Surprise… surprise… surprise… he could make a nicer loaf without the bread machine and it didn’t have a silly little paddle stuck in the bottom of the loaf. You’ll get a kick out of this video… “How to Make Bread Machine Bread without a Bread Machine” (Dec 31, 2014 – 6:32 min). Pizza in a Toaster Oven: For those who don’t have an oven, Steve developed recipes and technique for baking pizza in a toaster oven which he introduced in “How to Make Homemade Perfect Little 9” Pizza in a Toaster Oven (No-Knead “Turbo” Pizza Dough)” (Mar 18, 2015 – 6:02 min). Poor Man’s Dutch Oven (Sandwich Bread): Simply stated, a “poor man’s Dutch oven” is a bread pan covered by another bread pan. The purpose of the bottom bread pan is to shape the loaf into sandwich bread and the purpose of the cover (top bread pan) is to emulate a Dutch oven by trapping the moisture from the dough in a hot, enclosed environment. In other words… Steve replaced the standard Dutch oven with two bread pan to get the desired shape… sandwich bread which is demonstrated in “World’s Easiest No-Knead Sandwich Bread using a Poor Man’s Dutch Oven” (Aug 7, 2015 – 6:16). Fougasse (specialty breads using no-knead dough): After first proofing… dough is dough… it doesn’t know if it was kneaded by hand or you used the no-knead method, thus you can use no-knead dough for all your old recipes. For example, Steve developed several techniques and recipes for making unique breads such as “Easy Homemade Fougasse (no knead… no mixer… it’s as easy as making pizza)” (July 27, 2015 – 7:26 min). As you can see, over the years Steve has made a significant contribution to the “world of no-knead bread baking”. Obviously, his newer videos reflected in the newer technique.
