Theo Kirwan is the author of Sprout & Co's debut cookbook 'Saladology' Theo and his brother Jack are the co-founders of Sprout & Co. With 7 restaurants in and around Dublin, Sprout is the leading brand in Ireland for local, seasonal and flavourful food. In 2019 the brand started their own organic farm in Co. Kildare, cutting their supply chain from farm to restaurant to just 24 hours. Theo, a former graduate of the Ballymaloe cookery school has lead Sprout & Co’s online presence by sharing recipes and gaining a loyal following of over 200k people that get just as excited about food as he does.
