Growing up in a small town in the Cotswolds, when visiting his Grandparents, he would always learn the secrets of classic recipes such as shepherd’s pie, hearty Lancashire hotpot, and the mighty Sunday Roast Dinner. Such experiences instilled in him a deep appreciation for the simplicity and comfort of traditional British cuisine, and as he matured, he vowed to carry on this culinary legacy, striving to highlight the cultural significance of these beloved dishes. After pursuing a successful career in graphic design for 20 years, Edward chose to embrace his culinary passion full-time and opened a bistro in his hometown. The bistro quickly became a local favorite, renowned not only for its classic British offerings but also for Edward’s innovative twists on traditional recipes. By melding time-honored techniques with modern culinary trends, he created enticing dishes like smoked haddock and leek soufflés and vegan shepherd’s pies made with lentils and seasonal vegetables. His enthusiasm for local ingredients and sustainability also shone through in his menus, showcasing hearty dishes that celebrate the best of British produce while promoting mindful eating.
