Karima Elatchi, is a Moroccan native who grew up in an intellectual family, where my father encouraged me to read different literature. And next to my mother that take the Moroccan cuisine very original, authentic using only fresh and homemade ingredients. My cooking originate from my heritage. I grew up with my parents who instilled and fostered the love of learning from early age. My passion for cooking started by learning details about spices and cooking methods from my mom, being next to her a lot, as I am the oldest daughter. I watched and helped my mom prepped and designed a myriad of stackable foods for the pantry, from the yearly harvest of her family's land. I was always amazed by my mom's cooking and creating dishes from scratch, using fresh ground spices. On the other hand my father supported me to pursue academic life. I graduate from an institute of computer programing in 1985, and worked for 15 years for the Minister of finances. I never imagined cooking would became the center of my life one day, as I spent years in an office. And when I got married, I created my new space, where I celebrated all my culinary skills. My next journey continued in the united states, where I rekindled my love and passion of cooking, and eventually started a catering business, also teach workshops about healthy Moroccan cuisine, for about 20 years, to present.
