With a natural talent for cooking, his ‘professional’ career commenced at age 11, standing on a milk crate working the sauté station in a local restaurant. He received his culinary degree in New York, took advanced culinary courses in Asia, and studied chocolate work, candy making, and sugar sculpting under a renowned Swiss pastry chef. He trashed a bright future choosing the instant gratification cocaine and fast money buys. While in prison he cooked and wrote to feel productive and worthwhile, preparing gourmet meals with the limited ingredients at his disposal, to the high standard his training required, and to the utter disbelief of his cell mates.
