Laura Thomas, MEd, RD, LD, FAND is an Idaho native, wildflower and good food enthusiast. She’s an award-winning nutrition educator with expertise in child nutrition. In addition to the DASH Diet chapter of Culinary Medicine Part 3: The Diets, Laura has written nationally distributed resources for the USDA Food and Nutrition Service (Grow It! Try It! Like It! and The Menu Planning Guide for School Meals), the Institute of Child Nutrition (Nutrition 101: A Taste of Food and Fitness), and numerous food and nutrition organizations. Laura shares her beautiful wildflower photography in her latest creations: Be A Wildflower: An Inspirational Line Journal and Wild Ideas: Wildflower Dot Grid Journal. A Registered Dietitian, Licensed (in Idaho), Laura is a national trainer and speaker on a variety of nutrition and food safety topics for school nutrition and child care professionals. In her kitchen, she prepares and serves DASH-inspired foods, including marinara sauce from her home grown tomatoes! She’s a graduate of the Coordinated Undergraduate Program in Dietetics (BS) and holds a Masters of Education, both from the University of Idaho. She loves finding wildflowers in Idaho.
