Samantha Smith is an American Chef born in San Francisco in 1976. Samantha's love for cooking began as a child in her parent's restaurant, where she learned the basics of good cooking from her mother. But behind those long evenings at the stove was also a lot of suffering; in fact, her mother suffers from chronic kidney disease. It did not take long for Samantha to connect her passion for cooking with a desire to help her mother by creating a diet tailored to her. Thus, at age 21, she moved to France, where she worked for three years in a starred restaurant alongside Tony, a well-known Parisian chef. Back in the U.S., with her European experience, Samantha opened a special restaurant dedicated to people with autoimmune diseases and kidney diseases. After years of experimentation, the author spreads her knowledge through books to help readers cope better with their kidney disease through specific nutrition.
